Typical dishes

Typical dishes of the Verona cuisine are: “Bollito con la pearà”, that is beef meat with a sauce of grated bread, cheese, marrow, broth and black pepper.
Ingredients:

  • 250 gr. of beef marrow;
  • 50 gr. of butter;
  • 250 gr. of grated bread;
  • ½ litre of meet broth;
  • pepper, half very finely ground and  half in grains;
  • salt.
Also “Gnocchi” is a very delightful Verona dish, made of potatoes, white meal and eggs. Taste it with tomato sauce or sugar and cinnamon.
Ingredients:


  • 200 gr. of wheat flour;
  • 200 gr. corn flour;
  • 2 eggs;
  • salt.

 The “pastissada de caval” is a thousand and five hundred year old recipe. According to the legend, in 489 a.C., after the battle between Teodorico, king of the Ostrogoths, and Odoacre, king of the Barbarians, there were hundreds of horses lying dead on the ground. The Verona people, did not want to waste all that meat, and shredded it to macerate in the Amarone wine. They aromatized the meat with spices and vegetables to eat it after cooking on a slow fire.

The “polenta”  is the characteristic food of poor/humble farmers of  the Po Valley, which is prepared with corn flour and cooked in salty water. To taste it “ the Veronese way”, add very well cooked beans (polenta infasolà) or game (polenta e osei).

Also the “tortelloni di zucca” are a speciality of the area; this dish is made with  a sort of dough  that is drawn as thin as silk, cut and knotted like a scarf and enriched by a delicate filling of pumpkin.

 
Among the desserts, the “pandoro” stands out. It is the Christmas cake “par excellence”, made of flour, eggs, sugar, butter and yeast. It has a high and slender shape with ribs in relief. It is covered by vanilla sugar and it is very much appreciated for its soft and light paste, for its delicate taste and its pleasant fragrance. It was prepared by Domenico Melegatti in 1894 in his laboratory in Porta Borsari avenue.
During the year you can taste short pastries, puffs, fried bread chips fritters, little beans and the” mandorlato” that is a cake with lightly toasted and baked almonds, with honey, sugar and pastries..
